Dublin Dry Gin is a special addition to the Stillgarden range of premium Gins. Emanating from the huge success of our 46% Distillers Edition Gin, (first released in June 2020) using the same  socially-sourced botanicals and signature ingredients, we created Dublin Dry Premium Gin. With a more mainstream 40% ABV, this unique Dry Gin is full of juniper, hand-foraged rowan berries, balanced with refreshing citrus notes and completes with a subtle cubeb pepper finish.

Love gin? Why not come to Stillgarden and create your own?

Gin School & Distilling Academy

An all-inclusive experience including a historical adventure, botanical exploration, special gin tastings, a charcuterie board, & drinks throughout. All ending with your own bottle of spirit, crafted and distilled by you!

On arrival, you’ll be greeted with a welcome drink then learn about Stillgarden, the local history, the botanicals and the distillation process, followed by a visit to our community garden. Along the way, you’ll get to sample a variety of our tasty spirits. Later on, make and name your own bottle of spirit (gin, vodka, even a sambuca style if that’s your tipple) using our wall of 120 botanicals. While it’s distilling,  there’ll be a hands-on cocktail masterclass in our Speakeasy, Lab8.

Tickets include: welcome drink (G&T or Stillgarden Spritz), plus 2/3 more drinks, 4 gin tasting flights, cocktail class (and cocktail), a charcuterie board and of course your bottle of handcrafted recipe gin/vodka.

The experience itself is more like a show than a regular distillery tour. Perfect for rainy days but also sunny days as the terrace gets the sun all day!

If you have a look at our Google or TripAdvisor reviews you’ll see how much people enjoy it.

Juniper

The quintessential ingredient of gin, and described by head distiller Alan as "glorious," Juniper is known for its distinct flavour combination of pine and citric character that helps to make gin taste so fresh in comparison to unflavoured spirits, such as vodka. We have a handful of Macedonian Juniper shrubs growing in the garden that we hope will make it into our drinks after their two-to-three-year ripening cycle, but there is also a native Irish juniper that grows in the west of Ireland.

Caraway

Part of the Carrot Family, with seeds that look like cumin but taste like sweet liquorice. Caraway is a strong grower, self-seeding along much of the garden, and providing a bountiful harvest of the seeds we use in this drink. The root is tasty too.

Black Pepper

Not just used for culinary purposes, black pepper brings spice to the table. Native to South India, black peppercorns and their woody, fragrant characteristics account for a significant percentage of the world spice market.
