Under Pressure is a Vacuum distilled Irish Vodka. By removing oxygen and reducing pressure during the distillation in our rotary evaporator we force the purest, lightest elements from the rich, grain based spirit to create a Vodka that is extremely smooth, fresh and even slightly sweet.

Under Pressure is a Vacuum distilled Irish Vodka. By removing oxygen and reducing pressure during the distillation in our rotary evaporator we force the purest, lightest elements from the rich, grain based spirit to create a Vodka that is extremely smooth, fresh and even slightly sweet.

AROMA

Notes of cereal immediately followed by hints of light earthy and vegetal aromas completed by sweet buttery biscuit undertones.

TASTE

Crisp and clean on the palette with slight white pepper spice and subtle cereal sweetness, ending with a velvety smooth mouthfeel.

We meet up on Sundays for gardening, foraging or wildlife walks. Afterwards we head back to the distillery and relax with a well-earned complimentary drink.

Our Stockists

Irish Spirits tend to be traditional, looking at the past for provenance. Stillgarden looks forward: using modern equipment and groundbreaking technology to create flavours and spirits like no other. We will own Modern Irish Spirits.

Everything we do is with purpose and with our 3 pillars of Science : Community : Nature in mind.

Science

At Stillgarden we love to break the traditional rules of distillation and flavour creation using equipment rarely seen in a distillery. Vacuum distillation, Apeks supercritical flavour extraction, rapid ageing baths, centrifuge, to name a few.

Community

We created an onsite urban community garden from an area of wasteland next to the distillery, where we plant botanicals, pollinator friendly plants and wildflowers. We grow as much as we can in our community garden and use the botanicals to make our drinks.

“Vacuum distillation is distillation performed under reduced pressure, which allows the purification of compounds not readily distilled at ambient pressures or simply to save time or energy. This technique separates compounds based on differences in boiling points

Applying this principle to distillation is extremely interesting as we can target particular components of the botanicals we use by varying the pressure under which boiling point is achieved and as a result what flavour extraction can be attained” – Alan Mulvihill, Head Distiller.
