A unique Irish Vodka, Vacuum Distilled for pure perfection.
Under Pressure is a Vacuum distilled Irish Vodka. By removing oxygen and reducing pressure during the distillation in our rotary evaporator we force the purest, lightest elements from the rich, grain based spirit to create a Vodka that is extremely smooth, fresh and even slightly sweet.
Notes of cereal immediately followed by hints of light earthy and vegetal aromas completed by sweet buttery biscuit undertones.
Crisp and clean on the palette with slight white pepper spice and subtle cereal sweetness, ending with a velvety smooth mouthfeel.

We meet up on Sundays for gardening, foraging or wildlife walks. Afterwards we head back to the distillery and relax with a well-earned complimentary drink.

At Stillgarden we love to break the traditional rules of distillation and flavour creation using equipment rarely seen in a distillery. Vacuum distillation, Apeks supercritical flavour extraction, rapid ageing baths, centrifuge, to name a few.
We created an onsite urban community garden from an area of wasteland next to the distillery, where we plant botanicals, pollinator friendly plants and wildflowers. We grow as much as we can in our community garden and use the botanicals to make our drinks.
