Cafe O’Maro BBQ Sauce
3/4 cup brown sugar
1/2 cup red wine
1 tsp cayenne powder
1 tsp chilli powder
1 tsp paprika
80ml rice wine vinegar
80ml Café O’maro
Step 1 Mix together the Berrissimo, Blackberries and Sugar in bowl, cover and leave out overnight. Stir again the next morning
Step 2 Put all into a large wide saucepan and stir in the lemon juice. Keeping the seeds to one side. Cooking in the seeds extracts pectin to help the jam set.
Step 3 Cook on a low head until all sugar is disolved, then bring to the boil and simmer for 5 minutes. Turn off the heat and spoon some onto a chilled saucer. Once its cool push it with your finger. If it wrinkles it has set. Repeat until it sets
Step 4 Stir in the knob of butter while still hot. Leave for 15 mins then place into sterilised jars and seal.
Serve with chicken wings, ribs or as a dipping sauce.
