Give & take Ginger Cookies


100g salted butter, cubed
75g light brown sugar
1 tbsp fresh grated ginger
100g golden syrup
250g self raising flour
1tbsp ground ginger
1 tsp bicarbonate of soda
1 small egg yolk, beaten
50ml Give & Take


Grease and line 2 large baking trays and pre heat your oven to 190c

Put butter, fresh ginger, sugar and golden syrup in a put, melt and mix together then leave to cool

Mix the flour, ground ginger and bicarbonate of soda together in a bowl with a wooden spoon. Gradually stir in the cooled sugar mixture then the egg yolk and knead briefly to make a dough

Roll the dough into 20g balls and put 3cm apart on the baking trays.

Bake for 8-10 minutes until golden brown then allow to cool on a rack

Serving suggestion

Perfect on their own with a cup of tea or add ice cream and create a sandwich with them.
