Give & Take Marmalade
1.5kg caster sugar
2tbsp finely grated ginger
250ml Give & Take https://stillgardendistillery.com/product/give-take/
Remove the tops and bases from the limes, then thinly slice the remaining fruit. Cover with 250ml give and take and 1250ml water and leave overnight.
Pour into a large saucepan and boil over a hight heat. Continue for 1 hour or until the rind is soft.
Measure how much fruit mixture there is and for every 20ml add 220g of sugar and a tbsp of grated ginger.
Put back in a pot and rapidly boil for about 15minutes or until the jam reaches 105c
Put your jam into sterilised jars and seal.
This is great on toast in the morning or even on a slice of fruit cake
