Southside Drizzle Cake Recipe


For Cake

225g unsalted butter
225g caster sugar
4 eggs
230g self raising flour
1 lemon zest
50ml Social gin

For Drizzle

1 juiced lemon

85g Icing sugar
25ml Social gin


For Cake

Grease a lined loaf tin and pre heat your oven to 180c

Beat together the butter and caster sugar until pale and creamy, then add the eggs one at a time, slowly mixing through

Add gin and mix thoroughly and then sift in the flour. Add the lemon zest and mix till well combined.

Put the mixture in your lined loaf tin and put in the over for 45-50 minutes, check occasionally with a pick until it comes out clean.

For the drizzle

Mix the ingredients together and add sugar if needed to make a good icing consistency

Once the cake is cool pour the drizzle over the top, the liquid will sink in and the sugar with form a crust over the top

Serving Suggestion

Perfect on its own with a cup of tea or with a scoop of vanilla ice cream
